They do a lot of things from trying to get projects for the composers they 
represent, acting as the liaison between the production studios and composers, 
getting PR opportunities (arranging for interviews)...  This site gives a nice 
overview.

I think Gorfaine-Schwartz and Kraft-Engel are the two biggest players out 
there. 

When you get the time do check out this article by Richard Kraft written just 
after composer Basil Poledouris died. It's a great tribute to Basil and also 
provides an idea of how close the agent-composer relationship can be sometimes.
