One other thing, I don’t think water pipe is galvanized on the inside.  Rigid 
conduit or IMC may be, but it looks like a coating other than zinc is also 
allowed on the inside.

That is exactly what I do, I spray cold galvanizing on the ends.

Honestly, I’ve never seen a problem with pipe or conduit that was field cut to 
length.  If you obsess about such things, I guess you could spray some cold

we get our pipe from the local plumbing shop. site pro accidentally forgot to 
acetone wash the pipe one time, when we got the part number off of it, it 
turned out its just galvanized water pipe. 3 inch will be roughly 3.5 OD

You want 3" IC (Intermediate Conduit) - stuff is solid as a rock and usually 
galvanized pretty well also.  You can get a cap for it at the plumbing supply
