As previously mentioned, the OP is using a hardware raid system. It is impossible for ZFS to read "both sides of the mirror," which means it's pure chance. The hardware raid may fetch data from a bad disk one time, and fetch good data from another disk the next time. Or vice-versa. You should always configure JBOD and allow ZFS to manage the raid.
