IMHO there is no such thing as "too much redundancy". In the real world the possibilities of redundancy are only limited by money, be it "online" redundancy (mirror/RAIDZx,) "offline" redundancy (tape backups/off site disk based backups) or "infrastructure" redundancy (MPIO,..).
