With two disks, I would start with a mirror. Then, you could add
two more disks for expansion. You can also detach disks in a mirrored
configuration. Or, you could attach another disk to create a 3-way
mirror.

With a RAIDZ configuration, you would not be able to expand the
two disks to three disks. You would have to add two more disks.
