Ok, I haven't actually tested this with Samba, but I've done a lot of looking into this and spoken with Ed in the past.
First of all you need the Shadow Copy Client from Microsoft installed if you're running Windows 2000 or XP. Vista has it included already. Then you need to map a network drive. Just browsing UNC paths doesn't work for the shadow copy client, it's a limitation on Microsoft's side. In theory, if everything is configured correctly that's all there is to it. You should see the previous versions tab as soon as you look at the properties of anything on a mapped drive.
