Of course you can do this, but it has nothing to do with ZFS, per se.
Each storage pool (zpool) can only be mounted by one host at a time, 
which is what
you describe.

But if you are asking whether ZFS will be a clustered file system, like 
QFS, then the
answer is there is currently no plan to do so.  More details are in the FAQ:

hmmm... we need to update the FAQ with a description of how using ZFS with
pNFS and Lustre (in addition to the traditional network file systems) works.
