So the best you could do here for redundant space is (160 * 4 or 5)-160, and then use the remaining spaces as non-redundant or mirrored. If you want to play with opensolaris and zfs you can do so easily with a vmware or parallels virtual machine. It sounds like that is all you want to do right now.
