1. in case of /var it would be probably better right now to actually set legacy mounting and put it in a vfstab if you really want /var on ZFS. Here (on the list) was posted before a procedure on how to convert / to ZFS. If it's a production server I would strongly wait till ZFS root bits are integrated.
On the other hand I think it's good to just install system on UFS and then perhaps make a large pool from the rest of the disks and put a zone on top of it. Then put an application into a zone. That way you have ZFS. 2. to get system rebooted after jumpstarted just put in a finish script sync;reboot I'm not sure but there's some kind of variable you can setup to get it reboot itself.
