Because, it turns out that on MacOS, the Arial font has been moved to a sub folder of the standard fonts folder, to a folder called Supplemental:

/System/Library/Fonts/Supplemental/Arial.ttf

If this is indeed the explanation, would it not be rather simple to update the FOP add on to consider the Supplemental folder the standard fonts folder, so that the "Use Windows® standard fonts" button could work again?
