I did all that, including setting the "locale" to french (though my
operating system is set for french).

Then this last step was not needed.

The menus are now in french, OK.
All my texts are underlined with red : seems that the orthograph
corrector is still set for english

My answer assumes that you have also downloaded and installed the "French (français) dictionary" add-on. If this is not the case, please do that before proceeding with what follows.

You must either [a] specify that your document is in French or [b] declare French as being your default language.

[a] Add attribute xml:lang="fr" to the root element of your DocBook v5 document. (lang="fr" in the case of a DocBook v4 document.)

This is standard DocBook, not something specific to our product.

AND/OR

[b] Click the arrow which is close the "Automatic Spell Checker" button found in the status bar and select "French" from the "Default language combobox". This setting is done once for all.

See Spell checker:

and The "Check Spelling" dialog box:

http://www.xmlmind.com/xmleditor/_distrib/doc/help/checkSpellingDialog.html

The contents of the "book V5" structure, like "title", "dedication"...
are still en english. Is it possible to have them in french ?

When attribute xml:lang="fr" has been added to the the root element of your DocBook v5 document, converting it to formats such as PDF, HTML, RTF, etc, will generate messages in French ("Chapitre", "Table des Matières", "Listes des Figures", etc).

On the other hand, when you open a document in XMLmind, that is, when a document is rendered on *screen*, there is no easy way to have generated content such as "Chapter", "author", etc, translated to French.
