I’ve wrapped up about 12 different .profile files in an addon for my
authoring community to use, and they select the one they want using the
Conditional Processing Profiles dialog and it all works very nicely.
However, in order to give new users a place to get started, I define a
path to a default .profile file in the addon, and every time a user
opens a new session or creates a new topic, the default .profile is
assigned.
Is there a way of defining a default in the addon that would be
overwritten by the user’s selection, so that the user-selected value
would persist between authoring sessions?
I'm sorry but the answer is no. The only way to let user-selected value
persist between authoring sessions is to remove the default .profile
file from the add-on.
You seem to be using an old version of XMLmind XML Editor because as of
v6.3 (April 21, 2015), the feature which allows to force the use of
default ".profile" file in the add-on has been suppressed.

allowed to associate the same profile set to all documents having a
given document type, has been suppressed.

Of course, the corresponding facility in the configuration file have
been suppressed too.
