Intuitively we feel that "ought" to be able to configure these as
dropdown menus in the Attribute Table in the bottom-right window. Is
there something simple we've missed to enable this?

No, you didn't.
Once a .profiles file associated to a document, this should be automatic. The
problem is that we, XMLmind developers, have been too lazy to implement this
feature in the Attributes tool. Shame on us.
The limitation you have reported has been removed to a certain extent in
XXE v6.6 (to be released in a couple of months).
Still no dropdown menus in Attributes table (the design of XXE makes it
difficult to implement this), but the ".profiles" file associated to a
document is now taken into account by the Attributes tool:
1) The autocompletion feature of the attribute value text field now
suggests the values specified in the ".profiles" file.
2) Clicking the "Edit" button of the Attributes tool now displays a
dialog box listing the values specified in the ".profiles" file.
