It's not an Apple Java problem at all. It's entirely our fault.
The goods news is that XMLmind XML Editor v6.5, which should be released
in a couple of weeks, is the first version which supports high
resolutions screens on the Mac (and on Windows too).
This version is also the first one to have been tested on Mac OS X 10.11
El Capitan (and on Windows 10 too).
Also please keep in mind that "legacy java which Apple don’t bother to
finetune" is still the best choice for a Mac. However make sure to
install the very latest version on your Mac:

Note that XMLmind XML Editor v6.5 works fine using bundled Oracle Java
1.8.0_60. However, Apple Java 1.6 is still less buggy (we had to
workaround several Oracle Java 1.8 bugs) and has a better font rendering
on non-Retina screens.
