I am afraid that the only way is to switch to a font without the
mapping. Try this MWE:
\documentclass{article}
\usepackage{fontspec}
\def\slash{{\fontspec{Sanskrit 2003}/}}
\setmainfont{Sanskrit 2003}[Script=Devanagari,Mapping=velthuis]
\begin{document}
maa/ maa\slash
\end{document}
