Hi, Please note the following: latex can "speak many languages". This is achieved with the babel package. In xetex and friends, the babel package is superceded by the polyglossia package, but the objective is the same.
For example, the words for "chapter" and "section" are translated into the language of choice. Also, the hyphenation is set correctly. But polyglossia (and babel) go further in their "customization for languages", and also include several "typographic conventions" for a language. This can include the use of fonts in headers and footers, spacing between chapter title and running text, the use (or no use) of indentation to start a new paragraph etc. These settings are made in the gloss file for a language. If you do not like the result, you can either customize the gloss file (comment out the unwanted parts), or you can re-set things in the preamble of your document (cleaner but more work).
