It is possible. You can create your own UI. I guess I disagree that it should be a simple, basic thing provided in the default WixUI. I honestly thought the WixUI design was to make the text color "almost black" but not quite black such that high contrast wouldn't pick it up and flip it. Maybe that wasn't implemented... or maybe it was implemented but someone didn't bother to contribute it back to the community.
