You don't -- the only custom binder variables are those created by 
custom binders. WiX variables serve the same purpose. The downside is 
that some values are validated and don't accept all bind-time variables 
(loc, wix, bind). Product/@Version, for example, does accept binder 
variables but not WiX or loc variables. That's a fair feature request: 
It'd be convenient if any were allowed.
