To Bob's list (which is a little out of date) I'll add that Server 2008 also has Hypervisor, Microsoft's newer VM technology. If you can get an x64 Server 2008 box you can have x64 and x86 VMs. VMs really are the best way to test setups when you can do your tests and then revert to an untarnished image.
