ARPPRODUCTICON is a property and it is documented at
http://msdn2.microsoft.com/en-us/library/aa367593.aspx. Use a <Property>
element to set the property's value. See also the Icon table
(http://msdn2.microsoft.com/en-us/library/aa369210.aspx) and the WiX <Icon>
element.

If you want to use the 'default MSI icon' you'll have to make a copy of it
as an .ico file.

See the other properties whose names begin ARP to improve the information
displayed in Add/Remove Programs.
