We've been doing this too for one internal application. One benefit
that we looked alot is that you can develop/debug on Linux/Windows and
then only in the end go through the MacOSX tool chains. You can even
test the application using the iPad in the browser to see if it
behaves and looks okay without needing to install it.

Not that I know of, but we know of at least one user that is planning
this, but hasn't started the procedure yet.

Have you been able to use the instructions/script to build Wt as a
MacOSX Framework ?
