As per my understanding - AP will be marked with QOS tagging. And that distinguishes normal packet from VoIP packet. You can see this under WildPacket Airopeek - packet Options once you capture data.

Station/Device are VoIP packets?

-Would wireless or wired sniffer see this info? the
wireless may see the WMM?  but would the wired sniffer
see it?

2,and once it determines and identifies the VoIP
packets, what does it do? forwards to destination
device and decode/encode?

Where can I learn more details on VoIP?
