Hello-

Sounds to me like you just need a simple packet sniffer, and then look for SMTP 
(Simple Mail Transfer Protocol) traffic.

You could setup filters with Ethereal to do this for you.

What exactly is the thesis on?

my question is a general one : where can i get some documentation about 
monitoring the packets data belonging to electronic mails travelling through 
an ethernet LAN as plain-text? or anyone has got any idea about how 
diffucult to do this? which phases does it include to implement this?

note: this is for my graduate thesis...
