Just my $0.02, For your use case it would probably be a lot easier to go the InfluxDB + grafana route.
Here's a good writeup about getting started with InfluxDB https://fedoramagazine.org/using-influxdb-for-time-series-data-analysis/ weewx is meant to capture data from the weather station FIRST, archive it into SQLite (or mySQL) and then do graphing, sending to wunderground, etc. (not the other way around as you want).
