[GTK][WPE] Drop WTF_ALLOW_UNSAFE_BUFFER_USAGE from gcrypt classes

Leverage Vector::subspan() and others to avoid doing pointer arithmetic,
and as a drive-by adopt ASCIILiteral for the hash algorithm names.
