Change the StringBuilder in stringReplaceAllStringString to RecordOverflow.

The function was already checking for resultBuilder.hasOverflowed(), but
without this
RecordOverflow handler being explicitly specified, the StringBuilder will crash
eagerly
on detected overflow.
