[GTK][WPE] Enable `StackTraceTest.StackTraceWorks` and
`StackTraceTest.CaptureStackTraceLimitAndSkip` in Release build

Reviewed by Philippe Normand.
Since we're now using `libbacktrace` to symbolize the stack trace,
these tests should pass in Release build too.
