jQueryUI-oriented version of eStore sounds good :-)

I myself have been working toward the direction for a while now to
realize some ideas I have on e-commerce applications, but I am also
realizing that these applications may require rather consorted/
continuous efforts of a team of people including developers/users/
merchants. So, as you mentioned, collaboration is important.

There were discussions on this list about creating a task force on
web2py eStore. Massimo was very interested. I still think it's an
interesing idea, and could be quite exciting.

If not task force, it could be a subproject of web2py. Having task
forces or subprojects is not going to be a distraction in developing
web2py or its appliances. It'd rather serve for better distinction and
interaction of base/core software and its appliances in various
targets in the real world.
