Just a few notes: Sphinx is not part of Trac.
Django uses Sphinx -- docs.djangoproject.com is a Sphinx site. The organizational and cross-referencing capabilities of Sphinx outshine any Wiki. Documentation organized by a wiki often becomes jumbled and disorganized. However, a wiki is a good place to start, especially to get multiple contributors.
