I like debian more , but i can make ubuntu server if you prefer.

If you use vmware-server , starting from vmware server 1.04 there is :
vmware-vdiskmanager
/usr/bin/vmware-vdiskmanager

>From vmware-vdiskmanager help :
to extend vmware disk  to 36 GB
         vmware-vdiskmanager -x 36Gb myDisk.vmdk
