Jeff,

Is it activity on a server you want to be logged? If it is, then try 
out TightVNC. Within \Program Files\TightVNC\ there is a Winvnc.log
file.

You need to go into the server properties, advanced, and enable it.

Goto http://www.tightvnc.com/download.html and download it :D
