I have done this with great success, and not just with VNC either. All my software distribution is via Group Policy.
The problem I ran into using Group Policy Distribution and VNC is installing the service. Simply assigning VNC to the machines works fine, but if I try to also install the WinVNC service I get errors. I have not completed my testing, so maybe I will get it to work someday...
