We had a similiar situation at my institution, so we utilized a package
we already owned called Wise Installation Wizard.

Using on of their "listening" wizards, we installed VNC and then edited
the script that it made before compiling it for distribution within our
user community.  When our users activate the install it automatically
installs to the default directory and the only question it asks them is
to hit the "Finish" button.

However, the Wise package - while a great tool - is not cheap.  If we
hadn't purchased it for other projects I would not have been able to get
it for this usage.

Check around if you have Wise and have someone who knows how to use, you
can make a great little distributable package with it.
