Do you mean the applet in vnc-4_1-javasrc[1].tar.gz? I've got the same problem 
with you, and when I looked into the java source code, it seems that the part 
of code to change the Colour option has been commented, at the same time the 
function it used to do this has been removed from the source code already. 
Maybe you can try tight VNC.
