Hi Hank, The fact I can't touch dial with Groundwire and that the DialPad doesn't work well with Voiceover when in a call is one of the main reasons I stopped using Groundwire. Anyhow, best way I found was to double tap each number, but still even then it sometimes doesn't work and it's often too slow for when you have to enter numbers. I am now using Bria as a Voip app. If I want to dial a number touch typing works and during a call you can split tap and it seems to work well for me.
