hi, Any labels you created on gmails site will show up on your IOS devices since your using IMAP. To move messages to them, double tap the edit button, select the messages you want to move and then double tap the move button. You will then be able to select the folder you want to move the messages to. I'm not sure if this is what you were asking about.
I'm a bit unsure about your "Saved" folder on your Mac. Is this a folder you created on your Mac locally? Or is it a folder/label you created on gmail. If the first, then the folders wouldn't be synced across your devices.
