I made sure this works and it does, double tap and hold on the lock screen, e.g. on the time, then swipe right until you find “Customize” and double tap. Next swipe past all the stuff like the Calendar widget, clock widget, the Add Widget button, Depth effect and Appearance button. Once you get to Flashlight (if you haven’t change it previously), you have a “Remove Flashlight button, after you remove it you can add something else.
