If you use the "remove app from homescreen" option rather than "delete
app", the icon of that app is all which is removed from that particular
place. you can always find that app in the app library and drag it back
onto your homescreens again later when you want it more handy.
If you actually delete an app from your iPhone, a couple of things happen.
You also delete any information which isn't shared by other apps that you
may have created over time unless you've saved that elsewhere in your
iCloud drive. Provided that an app is still available in the app store, you
can always download it again without having to purchase it. You'll get the
latest version of the app on your iPhone when you do this. There are times
when apps are pulled from the app store and no longer available even if
you've previously purchased them. This mainly happens to older apps which
the developer has decided to pull from the app store and no longer
maintain. It costs money to keep an app available so if an app isn't making
money for the developer, they might choose to do this. I have a few games
which I must never delete or I'll lose them forever. Hope this helps clear
things up.
