If you go to settings, accessibility, accessibility shortcut, and make sure voice over is the only item selected, you won't have to choose which accessibility option you want turned on when you triple tap the side button.

The second time, I could understand the guy, and we did screen share. The problem for me was that in getting to Talk to Siri, Voiceover did not work through the prompts after saying say, Siri, what's the weather; it did not say for the second one, say Siri, send a message, but the Apple guy told me each time. Now that is in my phone. I was just surprised to find this many glitches.
