Hi Steve, You can do a screen recording. Go to the Control Center part of the settings app, and make sure screen recording is inserted in your control center. Then from anywhere, go to the control center and press on the screen recording button (usually located towards the end of the screen). Do the same to stop recording, or lock your phone screen, which also stops recording. This creates a video of your phone screen, including all sound. You can find this video in your photo library. If you want, you can also use an app like AudioConverter to create an audio file of the video you recorded, or record the audio to an external device in real-time. Hope this helps!
