Mirroring the iPhone sadly has nothing to do with deleting text messages. Theoretically, if you are set up properly in iCloud on both the phone and the watch, it should behave the way you want. I personally do not bother with text messages on my watch, so beyond the theory, I cannot help. However, 877-204-3930 Apple Accessibility very likely could answer this in fairly short order.
