You should be able to go into notification settings for each app, and see if there is the new customize notifications at the bottom of that screen. Double tap on that and go through those settings and see if you can add the alerts, sounds, etc.
You probably should check the app store to make sure that they have updated them for iOS 15.1 if the previous steps don't work.
