I recommend taking a screen shot, then having Seeing AI, Voice Dream Scanner, SuperSense, or any of the other OCR apps recognize the text from that screen shot, then put it in an editor and organize I how you want.
You could also print the screen shot if you have an AirPrint compatible printer. And save them or turn around and scan them.
