Given how accurate many of the rumours are nowadays I would say that we certainly do know quite a lot although there could still be room for a surprise or two. As for languages I would think that is more a function of the version of iOS and not the hardware and iOS 15 was introduced in June and the current Beta is probably very close to what the final release will be. I assume we'll hear next week when Apple's September event will be, I assume it will be the week starting September 13.
