You typically have to unlock preferences to give an app permission to use a specific MacOS feature. Normally, there is a table with the apps and a checkbox with the app that you can uncheck if you decide at any point that you don’t want to allow that app to sue that feature any longer. I have Zoom and a few other apps listed with Screen recording, and they all have checkboxes associated with them.
