I don't use a Mac either. However, I do have many rules, or filters, setup in my Gmail account. Gmail's labels feature is not quite like folders or inboxes in other email programs, but the same result is achieved. When I open my mail in the iOS Mail account, all of the same filters/rules are applied just like I set them up on the computer. If I delete a message with a label on my phone, it will also be deleted from the web interface on the computer.
