With iBooks, find the area on the screen where the text of your book is displayed, then swipe with two fingers down. It will read the entire book without stopping. It moves from page to page while it continues to read. I have read many books this way. The trick is not to do a two finger swipe down unless you first find and touch the area on the screen where the text is displayed.
