Hi Jen, If you go to the VoiceOver settings and in the roter, there is an option for text selection. Put that in there. Now go to the place you want to select text. Now use the roter and go to text selection. Now flick up or down to get to the amount of selection that you want to select such as lines, words, characters etc. Now flick right and you can select your text. The last thing you have to do is use the roter again and go to edit and flick down to copy or cut. This is a little more steps than the pinch gesture, but I could never get that gesture to work properly for me. If you want to pinch, pinch out to select and pinch in to deselect.
