Hello Max, While her emails may have been moved into the deleted/trash folder of her iCloud account, they may, indeed, still be available for recovery; assuming that the Deleted/Trash folder has not yet been purged.
Were I you, I would either from a mail client, such as the native OS mail apps on any Apple device or from iCloud.com, check to see if there are any messages inside the Deleted/Trash folder. As to your question, I don't know if one can use an iTunes backup to restore iCloud email messages to a device.
