You can edit the entry by telling Siri to "reschedule the appointment for tomorrow at 9 am" and she'll prompt you about what you wish to change.

I usually say: "Schedule an appointment, titled orthopedics, on October 11 at 8:30 AM." Siri repeats what she thinks I said. I can say 'change title' or "change time". Siri asks if I want to schedule the appointment and I say Yes. then if something is slightly wrong, or if I want to add additional notifications, I edit the entry.
